While we love all evge olive oils and use them exclusively, the unfiltered, single estate has the highest healthy polyphenols. We put it on dishes as a finish.... we do not heat it. Nature's gift!!

This is beautiful quality oil -- smoother than I expected with no sting on the tongue but a lovely grassy smell and a bit peppery. Really thick and delicious–unfiltered evoo is a rare find. Amazing for salads, dipping bread, and other uses where the taste can come through.
