Cabbage and Carrot Salad
Method
- Put sliced cabbage into a bowl and salt
- Add lemon OR apple cider vinegar
- Coat with EVGE olive oil
- Top with shredded carrot
This is the most common cabbage salad found in Greece.
There is a variation found in the Peloponnese called "mapa" that has garlic and uses vinegar instead of lemon.
Dressing: 1 part lemon OR vinegar to 3 parts EVGE. I have a jar with a mark at 1/3 cup and 1 cup and always have some on hand to dress every type of salad and steamed vegetable (except Greek salad, which only needs EVGE!)
You can use any type of cabbage--even the ready to use kind that are available in grocery stores. Red cabbage is a delicious and healthy addition as well as sliced fresh green onions and even an avacado if on hand!
