Super easy, delicious and healthy snack, appetizer or condiment to always have on hand! Perfect with freshly cut veggies, bread and more!
Ingredients
- 4 cups (32oz/907g) full-fat Greek yogurt
- 1 large English cucumber or 4 small Persian cucumbers, grated
- 4 cloves garlic, minced or grated
- 4 tablespoons EVGE extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh dill, chopped (optional)
- 1 teaspoon salt (plus more for preparing cucumber)
Instructions
- Step 1: Grate cucumber on the large holes of a box grater. Place in a fine-mesh strainer, sprinkle generously with salt, and let drain for at least 15-20 minutes.
- Step 2: Squeeze out ALL remaining liquid from cucumber with your hands - this is crucial for thick tzatziki.
- Step 3: In a bowl, combine yogurt, drained cucumber, garlic, olive oil, vinegar, and dill.
- Step 4: Mix well. Taste and add salt as needed.
- Step 5: Cover and refrigerate for at least 30 minutes before serving to let flavors meld.
Tips & Notes
- Keeps in a cold fridge for at least a week
- Squeezing out the liquid is the most important step for thick tzatziki
- Use thick Greek strained yogurt for best results
- Grate cucumber, salt and strain for at least 30 min.
- Squeeze ALL excess liquid from grated cucumber.
- Mix all ingredients: cucumber, yoghurt, vinegar, EVGE, salt and dill
- Serve with vegetable sticks, bread or wherever you like!
