Cabbage and Carrot Salad

Ingredients

  • 1/2 head green cabbage, thinly sliced
  • 2 carrots, shredded
  • 1/2 teaspoon salt
  • Juice of 1 lemon OR 2 tablespoons apple cider vinegar
  • 3-4 tablespoons EVGE extra virgin olive oil

Instructions

  1. Step 1: Put sliced cabbage into a bowl and salt.
  2. Step 2: Add lemon OR apple cider vinegar.
  3. Step 3: Coat with EVGE olive oil.
  4. Step 4: Top with shredded carrot.

Tips & Notes

  • This is the most common cabbage salad found in Greece
  • There is a variation from the Peloponnese called "mapa" that has garlic and uses vinegar instead of lemon
  • Dressing ratio: 1 part lemon OR vinegar to 3 parts EVGE
  • You can use any type of cabbage, including pre-cut. Red cabbage adds color and health benefits
