Ingredients

  • 1 lb (500g) ground beef
  • ½ cup bread crumbs
  • 1 small or ½ large onion
  • 1 tsp tomato paste
  • ½ tsp salt
  • 1 tbsp EVGE extra virgin olive oil
  • 2 tbsp fresh mint
  • 2 lemons, juiced
  • 2-3 potatoes, cut into wedges
  • Salt, oregano, and/or thyme

Instructions

  1. Step 1: Preheat oven to 400F (200C).
  2. Step 2: Blend onion, tomato paste, salt, olive oil, and mint.
  3. Step 3: Combine mixture with ground beef and bread crumbs.
  4. Step 4: Line roasting pan with parchment; form meat into loaf.
  5. Step 5: Arrange potato wedges around meatloaf; season with salt and herbs.
  6. Step 6: Drizzle with lemon juice and olive oil.
  7. Step 7: Bake 40-50 minutes until potatoes are golden.

Tips & Notes

  • No eggs required, though adding one creates a firmer texture
  • Fresh herbs can be frozen for convenience
  • Can also form into burgers and pan-fry instead of roasting
  • Try orange or mixed citrus juice, or add Dijon mustard and honey for variations
