Fresh Green Beans Greek Style

Always a favorite - easy, fast, delicious and healthy fresh green beans made the Greek way!
Ingredients
- 1 lb fresh green beans, ends trimmed
- 1 small onion, chopped
- 2 tablespoons tomato paste
- 1/2 cup EVGE extra virgin olive oil
- 1 teaspoon salt
- Water to cover
- 2-3 potatoes, cut into wedges (optional)
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Step 1: Trim the ends of beans and wash. Leave whole or snap in half.
- Step 2: In a wide pot, heat olive oil over medium heat. Add onion with a teaspoon of salt and cook until soft and translucent, about 5-7 minutes.
- Step 3: Add tomato paste. Stir and cook for about a minute until it deepens in color.
- Step 4: Add the beans. Toss to coat in oil and tomato mixture. Saute for 3-5 minutes.
- Step 5: Pour in enough water to just cover the beans (if using pressure cooker, 1 cup is enough).
- Step 6: Cover and simmer for about 40 minutes (or 6 minutes in pressure cooker) until beans are very tender.
- Step 7: If using potatoes, add wedges after 20 minutes of cooking.
- Step 8: Add parsley if using. Taste for salt.
Tips & Notes
- This is a "ladera" dish - olive oil dishes, because of the generous amounts of EVOO
- A complete meal with crusty bread and feta
- You can use fresh tomato or canned instead of paste for more sauce

- Cut off ends of beans and wash.
- Chop 1 small onion, teaspoon of salt and saute in olive oil.
- When soft (after about 5-7 minutes), saute tomato paste for about a minute and add beans and saute for about 3-5 minutes
- Add enough water to cover (or if using a pressure cooker - 1 cup of water)
- Cover and boil for about 40 minutes (or 6 minutes in pressure cooker)
- If desired, add potato wedges after about 20 minutes
- If desired, add 1 tbsp chopped parsley
- Taste for salt.
