Carol's Easy and Delicious No-Knead Bread!!!
Method
Carol's No Knead Bread
- Mix all ingredients together (except oatmeal!)
- Stir with a spoon, adding more water if necessary
- Cover and leave between 10-24 hours (or longer in the fridge).
- Stir and stretch dough
- Preheat metal baking dish like a Dutch oven at 425F (220C) for 20 minutes
- Cover bottom of baking pot with oatmeal, pour in dough and drizzle EVGE evoo on top
- Bake uncovered for 45 minutes
- Cool on metal rack for at least 30 minutes to an hour before cutting

This bread stays fresh 4 or 5 days covered OR you can freeze it and it will be as fresh as the when it came out of the oven when you take it out. I cut it into four and freeze.
TIP: Instead of plain water, you can infuse any herb you like --I like sage, rosemary, and thyme--and infuse all three together with 2 cups of boiling water--and add after it cools.
You can use white or whole wheat bread flour--I like using 3 cups white with 1 cup of whole wheat.
