1Ingredients

  • 4 cups (32oz/907g) full-fat Greek yogurt
  • 1 large English cucumber or 4 small Persian cucumbers, grated
  • 4 cloves garlic, minced or grated
  • 4 tablespoons EVGE extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 teaspoon salt (plus more for preparing cucumber)

2Instructions

  1. 1Grate cucumber on the large holes of a box grater. Place in a fine-mesh strainer, sprinkle generously with salt, and let drain for at least 15-20 minutes.
  2. 2Squeeze out ALL remaining liquid from cucumber with your hands - this is crucial for thick tzatziki.
  3. 3In a bowl, combine yogurt, drained cucumber, garlic, olive oil, vinegar, and dill.
  4. 4Mix well. Taste and add salt as needed.
  5. 5Cover and refrigerate for at least 30 minutes before serving to let flavors meld.

3Tips & Notes

Keeps in a cold fridge for at least a week

Squeezing out the liquid is the most important step for thick tzatziki

Use thick Greek strained yogurt for best results
