1Ingredients
- 4 cups (32oz/907g) full-fat Greek yogurt
- 1 large English cucumber or 4 small Persian cucumbers, grated
- 4 cloves garlic, minced or grated
- 4 tablespoons EVGE extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh dill, chopped (optional)
- 1 teaspoon salt (plus more for preparing cucumber)
2Instructions
- 1Grate cucumber on the large holes of a box grater. Place in a fine-mesh strainer, sprinkle generously with salt, and let drain for at least 15-20 minutes.
- 2Squeeze out ALL remaining liquid from cucumber with your hands - this is crucial for thick tzatziki.
- 3In a bowl, combine yogurt, drained cucumber, garlic, olive oil, vinegar, and dill.
- 4Mix well. Taste and add salt as needed.
- 5Cover and refrigerate for at least 30 minutes before serving to let flavors meld.
3Tips & Notes
Keeps in a cold fridge for at least a week
Squeezing out the liquid is the most important step for thick tzatziki
Use thick Greek strained yogurt for best results

For authentic results, use a high-quality extra virgin olive oil. Greeks pour, not drizzle.
