1Ingredients
- 1/2 head green cabbage, thinly sliced
- 2 carrots, shredded
- 1/2 teaspoon salt
- Juice of 1 lemon OR 2 tablespoons apple cider vinegar
- 3-4 tablespoons EVGE extra virgin olive oil

- 1Put sliced cabbage into a bowl and salt.
- 2Add lemon OR apple cider vinegar.
- 3Coat with EVGE olive oil.
- 4Top with shredded carrot.

This is the most common cabbage salad found in Greece
There is a variation from the Peloponnese called "mapa" that has garlic and uses vinegar instead of lemon
Dressing ratio: 1 part lemon OR vinegar to 3 parts EVGE
You can use any type of cabbage, including pre-cut. Red cabbage adds color and health benefits
